35 Paleo Cookie Recipes for Easter

By Julianna Pacinhik When I think about Easter cookies a few things come to mind. Bunny cutouts for sure, but also certain flavors of spring like carrot cake, citrus, coconut and chocolate (always chocolate). Cookies are an easy dessert that doesn’t have to be formal. You can have several different flavors to please a variety of guests. I always look forward to carrot cake and lemon desserts! There are an incredible amount of grain and refined sugar free options, its time to make holidays a little healthier! My Halloween Candy Plan

Yesterday a fellow mom reached out to ask how I deal with Halloween candy in my house since I’m a known anti-candy fanatic. Here’s what she asked and here are my answers: Do you let your kids eat the Halloween candy? Yep. It’s once a year so I don’t stress too much about it. I do try to slow them down, though, particularly when they first get home from trick-or-treating because we’re inching close to bedtime and I don’t want sugar interfering with their sleep (because it will). Once 5PM hits, they’re done for the day; we’ll have dinner (which…

How to Order When You’re Paleo

Yesterday I had brunch downtown at San Marzano (delish!!). The place is known for pasta, so you’d think it would be completely black-listed for a Paleo chick, but there’s almost always something on the menu wherever you go that’s orderable as-is — or something you can ask the server to tweak for you. Here’s how I do it:  I don’t even look at the pasta options. Call me crazy, but I’m not into self-torture. I head straight for the egg/poultry/seafood/beef entrees. Whichever entree is paired with a green veggie is automatically top of my list. If there’s rice or some other…

Pumpkin Bread I Don’t Hate Myself for Gorging On

Whenever I bake a new treat I have the hardest time not devouring the entire thing myself (that’s not an exaggeration). If I love it, I’ll just keep eating it until it’s gone. As you can imagine, that’s not going to help me lose this baby weight any time soon. My advice:

“If you’re going to pig out, make it on something you won’t regret tomorrow.”

Since going Paleo back in 2012 I’ve learned I can borderline gorge myself on cookies, cakes and pies and not gain weight or fall into a carb craving cycle like I did in my “regular” brownie days.

Almond Milk Hot Chocolate

Who doesn’t love a hot cup o’ hot cocoa on a cool Fall night?! The problem is, traditional concoctions are loaded with sugar and made with dairy. If you’re watching your figure and/or cutting out dairy, you need an alternative. THIS is your alternative. Ingredients: 1 cup unsweetened almond milk 1 Tbsp baking cocoa 1 packet stevia dash of cinnamon Steps: Boil or steam almond milk Add cocoa powder and stevia packet Sprinkle with cinnamon Enjoy!

Best. Brownies. Ever.

No really. I’ve made this recipe dozens of times for non-paleo family and friends and have yet to receive one even slightly negative comment. They’re also a delightfully unexpected lactation treat; I have more than enough milk whenever I eat them (which is often, for this very reason). I’ll bake a batch once a week and store them in a ziplock so I always have a delish and healthy chocolate treat ready when my sweet tooth kicks in (which, again, happens often). I even took a batch to the hospital when my baby was born because I knew we’d need…

Vanilla Cupcakes with Chocolate Frosting

So… tonight is the much anticipated Bruce Jenner interview with Diane Sawyer (!!!). To honor the event properly, my SiL and I decided to host a viewing party complete with organic red wine and Paleo cupcakes. Planning, shopping, and baking started early this morning and has pretty much taken me all day. (EVERYTHING takes 100x longer when you have a four month old.) For anyone else, though, this recipe is super simple and quick and the finished product is amaaaaazing!! I tweaked the paleo vanilla cupcake recipe from The Wannabe Chef (used coconut sugar vs cane) and topped them with Elana’s…
