So… tonight is the much anticipated Bruce Jenner interview with Diane Sawyer (!!!). To honor the event properly, my SiL and I decided to host a viewing party complete with organic red wine and Paleo cupcakes. Planning, shopping, and baking started early this morning and has pretty much taken me all day. (EVERYTHING takes 100x longer when you have a four month old.) For anyone else, though, this recipe is super simple and quick and the finished product is amaaaaazing!! I tweaked the paleo vanilla cupcake recipe from The Wannabe Chef (used coconut sugar vs cane) and topped them with Elana’s Pantry’s paleo chocolate frosting, which is insanely simple and delicious, by the way. Now I don’t know which I’m more excited for: the cupcakes or the interview!!!
Ingredients
Cupcakes
1/2 cup plus 2 Tbsp coconut flour
4 eggs
2 egg whites
1/2 cup coconut palm sugar
1 cup coconut milk (full fat, canned)
2 tsp vanilla extract
1/2 tsp baking soda
Frosting
1 cup chocolate chips (I use Enjoy Life)
1 cup coconut oil
1 Tbsp vanilla extract
Steps
1. Pre-heat oven to 350°F and line cupcake tin with baking papers
2. Add all cake ingredients into mixing bowl, blend on medium speed
3. Spoon batter evenly into cupcake tin
4. Bake for 30 minutes
5. While cupcakes are in the oven, prep the frosting
6. Melt chocolate chips in a sauce pan on low heat
7. Stir in coconut oil and vanilla
8. Cool in refrigerator for about 30 minutes to let it firm up a bit
9. Top cupcakes with icing and enjoy enjoy enjoy!!
